During a 2015 trip to Maui, I had the opportunity to meet and interview Top Chef finalist Sheldon Simeon at what was then his new restaurant, MiGRANT Maui, in the Marriott Wailea Resort.
Chef Sheldon was on Season 10 of Bravo's Top Chef and was one of the final three contestants.While the title of Top Chef may have eluded him, success -- and happiness -- clearly have not. I sat down with Chef Sheldon in early May to get his thoughts on what got him where he is, and what's in store for his future.
Chef Sheldon Simeon: a successful chef who, despite his notoriety, still lives the spirit of aloha.
MiGRANT Maui closed its doors as of May 13, 2016, but Chef Sheldon was quick to open his own new spot. Tin Roof, a mostly bowl-focused lunch spot, opened later that year in an unassuming strip mall at 360 Papa Place, close to the intersection of Dairy Road and Hana Highway.
Expanding his empire, the chef plans to open his second place and first full-service restaurant. Called Lineage, it will feature dishes that are designed to be shared, and which are derived from Simeon’s Filipino family recipes as well as traditional Hawaiian cuisine.
Lineage is expected to open during the summer of 2018. I can't wait to visit!
