Wednesday night was the fourth night of Advent and the fourth wine from our Advent Wine Calendar, which our adult children presented to us at our Thanksgiving feast. Our wine for the evening (well, first wine if we’re being honest) was Once Upon a Time, a Rosé from the IGP Aude wine region of France.
This wine’s “refreshing elegance” is characterized by “delicate flavors of ripe strawberries, citrus zest, and hints of floral aromas” with a “story woven into every sip.”

But seriously, wines from the IGP Aude region come from grapes grown in soils ranging from limestone to clay and gravel, contributing to the wines' distinct flavors and characteristics. The wines produced from those grapes include reds, whites and Rosés.
This Rosé pairs well with grilled seafood or chicken, salads, charcuterie and fresh fruit. We paired ours with grilled chicken, roasted potatoes and mixed vegetables.

Rosés can range from "Did I miss my mouth" light to those with a distinctive, if not heavy, flavor profile. This one was extremely light, although it did have hints of strawberry on the nose and strawberry and vanilla on the tongue. Lay it down because, to our taste, it's more a wine for sipping on a warm summer day.
