Well into the second week of working our way through the Advent Wine Calendar, our wine for Day 10 was a California Cabernet Sauvignon named The Butchery.
California Cab Sauvs are generally robust and full-bodied with a deep rich color and flavors of black currant, blackberry, plum, and hints of vanilla, tobacco and spice. This one did not exhibit quite that complexity, but it did not disappoint.

What is disappointing is that it's hard to know much about the origins of the grapes except that they're from Cali. A couple of years ago, Flying Blue Imports - the company that markets the Advent Wine Calendar - included a Cab Sauv from The Butchery that was produced in the country of Moldova!
This rendering of Cab Sauv, whatever its makeup, was very pleasant. Berries on the nose and the palate, medium-bodies without a hint of tannin or too much alcohol, though the bottle said it weighed in at 13.9%. Nonetheless, very pleasant with food or by itself.
Winemakers generally trumpet the fact when the grapes in any specific wine come from a single vineyard so this one is likely a blend of grapes from all over. In addition, it's a non-vintage wine so the grapes could have come from several different years' growths.
Cab Sauvs pair well with grilled meat - particularly red meat - stews, sharp cheeses, and dark chocolate. We reprised Day One and went back for a second round of lamb chops from Australia along with roasted potatoes and vegetables.
