During a brief visit to Vancouver, we enjoyed a wonderful dinner at The Cove!
Heading out to decompress after a family event, we found The Cove which offered a refined atmosphere in which we could relax, even though it's a larger place that appeals to families as well as couples.
Our server, Carly, was quick with recommendations but also listened to what we were hungering for.
Martinis started the evening and were very well-prepared. Carly confirmed that the style at The Cove was to give the glasses a rinse of dry vermouth, then adding the shaken and chilled main liquor. As a former bartender, I knew of that method but had never tried it. It produced drinks that were incredibly smooth and delicious.
After giving us some time to unwind with our beverages, our server came back to take our entree orders. She explained that our visit was on the first night of their new menu so there were no specials on offer, but the regular menu had plenty of choices.

I opted for a chilled seafood sampler of lobster; salmon two ways; sliced, smoked sea scallops; and four HUGE prawns. My wife enjoyed a sesame crusted ahi tuna steak. Both were exactly what we'd been craving.

Carly checked back often enough for us to know we'd not been forgotten but not so much that it felt overbearing.
While we ate indoors, the large windows provided a nice view of the Columbia, at least until the sun went down. Then it was off into the night, with the thought that we would return as soon as we could manage.
Prices were quite reasonable considering the quality and quantity of the food, and the service sent everything to the next level.
